This Turkish Bread (flat bread) recipe is delicious and will impress your family and friends. Serve it with some typical Middle Eastern Mezze like Hoummus, Babahganoush, Tabouleh and pickles (olives). Or cook (grill) it on top of your BBQ at your upcoming Garden (Spring) Party and serve it with some grilled lamb chops, sausages and shish taouk (Lebanese grilled chicken skewers).

INGREDIENTS
QUANTITY UNIT PRODUCE
14 GR Dry yeast (active)
10 GR Sugar white
10 GR Salt cooking
375 ML Water (warm – 45 C)
125 GR Yogurt plain (Greek – not sweet)
350 GR Flour plain
150 GR Flour brown
As needed Sea salt flakes (Maldon), Black pepper form the pepper mill
As needed Olive oil cooking
MISE EN PLACE | PREPARATION:
- Dissolve yeast in warm water, add sugar and salt, mix till all dissolved
- Add to the white and brown flour, add Greek yogurt and mix well.
- Knead to a soft dough (not too sticky).
- Shape into a ball, put in a bowl and cover with a wet towel
- Let rest (rise at room temperature) for approximately 2 hours
- Cut the dough into small pieces (balls) and form / shape into small discs (pizza like)
- Roll out the dough (0.5 cm thick) with a rolling pin (dust with plenty of flour)
- Let dough rounds rest (cover with wet towel) for approximately 10 minutes, then season both sides with sea salt flakes and black pepper mill
- Heat up skillet or frying pan (best to use cast iron or / and your heavy duty grill pan)
- Add some olive oil cooking (spread evenly), place dough and “pan fry” golden brown on both sides (best to flip it over with a spatula)
- Set aside, rest and serve warm with some Middle Eastern Mezze like Hoummus, Babahganoush and pickles (olives, etc.)
REMARKS | COMMENTS | SUGGESTIONS:
- The flat bread can be prepared in advance, cool down and store in air tight container, heat up before serving.
- The “flat bread” is versatile and can be prepared / cooked as well on a BBQ grill or / and in a skillet on open fire.
- Goes well with Middle Eastern Mezze (dips and pickles) as well as a base for any kind of wraps.
